My mom has been asking me constantly when Baby O will have his first bite of porridge. But I’ve been frankly hesitant because I just didn’t think it had enough nutrients in it. It’s easy to make, sure, but he’s getting tons of nutrients in his other food (beets, chicken, squash, broccoli) and I saw this recipe and it dawned on me that I can make a healthier porridge to satisfy us both!
I subbed out the white for brown rice and added in nutrient rich ingredients like sweet potatoes and pumpkin, dried scallop for some deep umami, anchovy for some brininess, and pacific cod for some omega 3.
- 1 cup brown rice
- 3 cups water
- 3 oz protein (fish or ground chicken/pork/beef)
- 1 oz sweet potato (orange-color), cut into small pieces
- 1 oz pumpkin/kabocha/acorn squash, cut into small pieces
- 1 dried scallop
- 1 egg yolk
Rinse the rice until water is no longer cloudy. Put all ingredients into the rice cooker. Before serving, if using an egg yolk, lightly beat the egg yolk and add to the porridge. Stir a few times, and let cook for about 1-2 minutes. Puree the porridge. Serve it cool to avoid burning your baby.
